General tips and information

  • The best fruit for juicing is apples that are ripe but not overripe. Juice from overripe apples contains too many suspended solids, too little acidity and often tastes bland. Overripe fruit also cannot be processed technically, as it turns to pulp.
Unripe fruit, on the other hand, produces a sour, unbalanced juice.
  • Do not use windfall fruit. If apples have been in contact with the ground for a longer time, they may become contaminated with wild yeasts and moulds. When shaking the trees, it is advisable to lay out tarpaulins or blankets underneath to prevent the apples from touching the ground.
  • Apples should never be stored in sacks for several days; they should be processed promptly after harvesting. Fruit crates are recommended for transport.
  • Other fruit or vegetables that are firmer than apples, such as quinces, beetroot/carrots, should be cut up beforehand. Pears can only be processed when firm-ripe.
  • Mixed apple juices with 3–5 varieties usually taste better than single-variety juices. Dessert pear varieties should be mixed with tart apples.
  • As a rule, the juice yield is between 50% and 70% of the apple weight in litres.
